My 66 Mustang has 2,000 miles on a fresh 289. The engine runs good and strong but is using a quart of oil in 350 miles. Compression pressures run from 180 to 165. The engine is running full roller rocker arms with stock valve covers, the covers have alluminum spacers under them for rocker clearence. I pulled the PVC hose off and found evidence of oil. I'm thinking the PVC system is at least part of my problem. Has anybody experienced this? Does anybody have any ideas?

WS, there are a couple of easy things that need to be checked. First, since you are focused on the PCV valve, is the baffle under the PCV valve still in place in the valve cover? You should be able to see it or feel it through the PCV hole. It is there to keep oil from splashing into the PCV valve. Second, how do your spark plugs look? If they are oily looking or have a lot of deposit on them, the problem will be with the oil coming up past the oil control rings.
That all is assuming there are no large oil leaks on the engine, and that you are running the correct viscosity of oil.
Good Luck

Unless something is wrong internally, check the oil baffles in the valve cover, as Pablo mentioned. If they are gone. it will suck oil mist into the straight vaccum of the PCV valve and burn it up.

Thanks Pablo, and Steve. The baffle in the valve cover is in place, however the alluminum spacers under the covers has raised the baffle 1 3/8 inches. I can see alot of the valve springs on either side of the baffle. Looks like I need to extend the baffle or replace the covers, and then test. Thanks for your help, I hope I'm on the right track.
