i have the fold dodwn rear seats and are they supposed to have carpet that comes off the back and down across the trunk or is this some thing that some one added?

If your coupe has fold down seats in it, then someone has taken some from a fastback and bolted it in.

I believe a fox body rear seat swap would fold down like you are saying. Original coupe seats didn't fold.

I think he is refering to the fox body split seat conversion. there is a metal panel that had carpet on it. I had 4 pieces. I one piece seat bottom, 2 fold down seat backs, and there was a metal panel that had hinges. I remember test fitting in the old rusty coupe I had, I remember it actually being the same width as coupe seats, but the one thing I do distinctly remember is because the fox seats had curvier edges, there was gaps at the upper outside corners and the lower outside corners. Do your seats have that?
that is a problem that could be corrected with customizing interior quarter panels.
I also remember how I was going to customize the seat fold down releases. I was going to use braided cloth strap and chrome D ring, that would be just right at the edge of the top of the backseat. As the stock fox body releases I had were behind the seat and the package tray would have interfered.
Edit: here is what the hinge assembly looks like.
