I have seen photos of people stuffing the void at the wheel wells with batt insulation, etc. to keep the noise down. I have recently added a peel and stick to the area, but while I am in there.... Do I add anything else?

For me, that is too high risk. If it ever gets wet in there, you will never get it dried out.
