I currently have power steering and comptemplating removing it. How would car feel without it? Would steering be more responsive? How involved of a process is it to remove it?

The results of removing the P/S is dependant on the present condition of the related components.
A complete rebuild of what you have now will bring back the responsivness to the way the car was when it was made. Without rebuilding everything you may not see much improvement.
Just taking the P/S off will make the car harder to steer when parking but little difference when in motion.
If cost is not a factor go with a power rack then your car will handle better than a O/E power or manual original set up.
As far as the change over is concerned, you may have to replace the steering box with a higher ratio unit, pitman arm and the center link unless you go for the manual steering adaptor that replaces the control valve.
Quite a few years ago I did a 100% rebuild of the O/E power system on my 68 and I am still quite pleased with the results. Since I have never driven a 68 with a r/p set up I have nothing to compare it to.
Others here with a R/P can chime in on their findings.

Having converted my 66 fastback from manual steering to power rack, and now having purchased a 69 coupe that has manual steering, I can tell you that I would NEVER consider removing a working power steering setup. The 69 is a bear to steer !

Manual steering might be OK with a 24 inch steering wheel!

I installed the Rod & Custom Mustang II front end w/R&P PS on my 65. The original setup had manual steering and I installed a PS box (16:1 ratio opposed to 19:1, I think). I have 225/60 tires, it was a bear at low speeds or trying to parallel park. Much happier with the PS and would recommend it.

Oh, forgot to add a comment to Rudi's 24" steering wheel post. While this is an exaggeration, even a difference of 1" of steering wheel diameter changes the amount of force one can deliver. The original steering wheel in 65-66's was 15" ... factor the steering wheel diameter into your decision also.

I measure the stock wheel on my '65 at 16". I have factory powersteering that works quite well but I would really like to have a stock appearing wheel that was 14.5" in diameter. I even tried, to no avail, to talk a reproduction wheel manufacturer into to making such an animal.
I know there are 14.5" aftermarket wheels available but I want the stock appearance.

I could have sworn that I recall seeing an ad sometime in the last 15 years for smaller diameter stock looking wheels. They do have some decent stock looking wood rimmed wheels that are smaller, right?
