I borrowed a buddies infra-red temperature reader to check my car's operating temps. Here is what I read -
Gauge 1/2 way - 179deg
Gauge 3/4 way - 190deg
It seems ok to me, but what do others think?

I still run the original 4 blade fan on mine, but added a cowl.
I don't tend to experience overheating. Getting the car up to 3/4 on the temp gauge is a bit of a challenge.
Out of curiosity, what is the highest temp these things can run at, without problems?
I'm guessing that near H on the gauge must be around 200 - 210deg?

Where are you taking the readings?
The most important one is at operating temperature, checking the difference between the top and bottom of the radiator to be sure radiator is doing something.

I was taking the readings beside the top hose on the radiator and at the thermostat housing on the block. I put masking tape down so the surface didn't have glare (which I heard affects the readings).
I just checked top and bottom of radiator with readings taken beside top and bottom hoses.
Top hose - 152deg
Bottom hose - 122deg
The temp gauge was reading about 1/4.
I took another quick reading when the temp was closer to 1/2 and this is what I got.
Top hose - 161deg
Bottom hose - 123deg

Just a word of caution, the gauge reading is dependent on the CVU output voltage. The voltage output can vary from one car to another. This CVU voltage also affects the oil pressure and fuel gauge readings.
The best thing to do is what you’re doing now, comparing the gauge against the temp readings you’re taking, essentially calibrating your gauge.

Thanks for the heads up on that. Calibration was my aim with this exercise and I've probably achieved that to a degree.

That is a good temperature drop across the radiator. Shows nearly 40 degree drop. Probably better going down the road.
