I'm installing a saginaw style pump on my 67 coupe. I've read that a kit for reducing the pressure is needed. What does the original pump produce pressure wise?

Not sure, the adjustment is made by people who feel the steering as delivered is twitchy. I was one of those people, so I added a couple shims and dropped the pressure, and the twitchiness went away. I would recommend installing it and driving it and see if you think its a problem. If you don't you save the cost of the kit.

Per the instructions, as delivered with zero shims it bypasses at 1,350psi, so that's max pressure.

I wasn't asking for the pressure of the saginaw pump. I was asking what the factory pumps ran or how much the system can tolerate.

My R&P PS steering is from an 88-93 Fox Body Mustang, pressure is recommended at 1000psi. I had originally had 1200psi that made the steering 'touchy'.
You'll need to match the pressure to the particular PS steering setup you have installed.
The original PS specs for 65-66 Mustangs (as listed in the Ford Service Manual) is 750-900PSI.

I have the original factory system from 1967 and was just wondering what the system could best handle. I saw a guy comment on another forum saying he was told to keep between 700-900 psi but I've not seen any others to corroborate that with and I thought I try this forum with the wealth of knowledge in here I've seen on here.

I've recently replaced the slave cylinder, control valve and hoses in the last year or so and pump started to leak and I decided to upgrade to the Borgeson saginaw pump.
