I order mine from valvoline. I use 10w40 in the 331’s, 10w50 racing on the 427. Get discounts and free hats and such. Not synthetic but they have it if wanted. I change every 5k.

It depends on the engine. 5W30 is perfect for a typical 5.0. I am gun shy about changing an engine over to synthetic if its run conventional and has more than 100k on it. I still run conventional 5W30 in my FJ for this reason, and change it every 5k per Toyota's change interval.
I run Amsoil 5W30 in my WRX and change it every 8k. I could probably go much longer between changes.
I exclusively run Shell Rotella 5W40 T6 (full synthetic) in my Diesel, though I will break in the new engine with Rotella 15W40 conventional before switching.
I run NAPA 5W20 in my '07 F250. I change it every 5k. Its either semi synthetic or full synthetic. There is no conventional in that weight.
In the '67 I run 5W30. I ran 10W40 or straight 40 for years, but eventually switched due to it simply not needing that much oil weight. The oil pressure was like 50lbs at idle. The oil grading system has changed since these cars were new, and 5W30 or 10W30 is actually more like the oil they ran from the factory.
In the end, unless you have an engine with really wide clearances that runs a ton of HP I'd stick to what the manufacturer recommends and change it no more than every 5k (unless its a really good synthetic). The most important thing about oil is that it gets changed regularly. My thoughts have always been that oil is cheap and engines are expensive.

In my 351W I use 10W-30 Pennzoil, and will change it every 5000-6000 miles, or every year.
No speical reason for running Pennzoil other than that I've been using it for many years.

Not to add anything important, I used to run oil from dollar general in my mini vans. It used to be made right here in the Lou by this company which is still in existence today. Never had a problem with it. Until the price went up, and it became cheaper to get oil elsewhere. Nice while it lasted.
Sometimes, you just have to read the labels real well. You might be surprised at the ultimate sources of branded products.

Worth noting that if anyone has a flat tappet cam they need to use a ZDDP additive like STP, etc. Don't listen to people telling you to run Diesel oil because it has more zinc in it. It had more zinc in it years ago, but those oils have now also been reformulated to lower the zinc content below the level acceptable flat tappets. Modern Diesels all run roller cams, and have for about 2 decades now.

The lifeblood of the 331 roller in my 68 uses 5w-40 Castrol synthetic, usually changed at 5000 miles or once a year. Which ever comes first.

Really, no one else has an oil shelf? I have a shelf per vehicle in my shop with filters, oils, etc. Some filters I've found are MUCH cheaper to get in bulk online (I only use Ford OEM or Racor (which supplies Ford) for my Diesel) where they are literally half the price. I buy a year's worth at a time to save on shipping.
The drain pan organization is definitely better than mine. Mine are all just stacked on top of my waste oil tank (a heating oil tank I built a wood frame/box around so I had a place to put those pans). When the tank gets full I use the guy who empties my neighbor's waste oil. So long as he can get 300 gallons or more he doesn't charge (I think he sells it to places that burn it in waste oil furnaces).

I also have a stock but it isn't quite as extensive nor as neatly organized. I have Rotella T6 synthetic for the tractor and my daily driver diesel. The bike gets Mobil 1 full synthetic. Everything else (Mustang, lawn tractor, pressure washer, generator, etc.) gets whatever leftovers are on the shelf (trying to reduce my stock).
As far as intervals, the tractor is every 50 hours, the daily driver every 5000 miles or one year, whichever comes first, and the other stuff is normally every year, unless it hasn't run.

Now thats organized! I try to do something similar. I have 9 cars and the newer ones use different weight oil. Lately I've been buying my oil at Costco for my newer cars.
