Anyone know how far you can shim the upper a arm to increase castor. I can get 5/8" on the front bolt and 1/8 on the rear. This gives me about 7 degrees castor and 1/2 degree negative camber. Will this cause any problems with suspension?

Wow 7*. I'd run it thru the suspension travel arc without the spring, and also check bump steer with that much caster.

I've not heard of it being done on a Mustang, but its how GM cars like the Camaro, Nova, etc. are aligned. The only concern I would have is whether or not you keep enough thread engagement in the fasteners securing the UCA. Ideally a bolt needs to go through the nut by a length at least equal to the diameter of the bolt to maintain proper torque. So long as that is maintained I don't see anything inherently wrong with the idea. I might tack weld those shims in place just for peace of mind, but otherwise should be fine.
