I''m going to be installing a complete American Autowire Harness in my 67 Fastback.
I have a few other things like a console with light and 12 volt/usb outlets, volt meter, AF gauge I need to wire up.
I want to add a male and female plugs so I can easily remove later on should I need to pull the console out.
Also a few connections from my engine I would like to add plugs so that I can just disconnect the plug if I ever pull engine or need to remove something.
What kind of connectors should I use ?
was looking at the Delphi Weatherpack and they look great but kind of pricey.

I use various Delphi connectors/terminal/seals. I don't normally use the Weatherpack brand. Go to Terminal Supply Co. on line and check them out. They will sell the M/F connector bodies and terminals in small quantities. This stuff ain't cheap but it makes a very nice and secure job. You'll also need a good "double roll-crimp" tool.

I’ve bought the Delphi brand weather packs from Amazon. They work very well. Get a good crimp tool.

I hated the connectors that my AAW came with, some kind of crappy GM junk.
Try these, good price and come in 2-3-4 and 6 wire.

There's Weatherpak and Metripak, I've used both pretty extensively in wiring up my Lightning with the Megasquirt.
There's several variations based on size (some of the Weatherpak shells are bulky IMHO), wire gauge, and sealed/unsealed. Getting a good crimp tool is key as well.
I've sourced from eBay, Mouser, Waytek, and Amazon depending on what my needs are. Most recently I installed the main Megasquirt fuse/relay box in my Lightning. I used GT 280 Metripak because it supports up to 25A and 10GA wire. Also used 3 smaller 5 pin shells rather than the big bulky 16 pin shell.
Here's a link to Waytek's catalog, I mainly use it for part#'s as Waytek can be expensive and have minimum quantities as well as a minimum order amount.

I've used Weatherpack connectors for years, but they are bulky by today's standards. Pricey too. I also don't think they really look right on an old car. They have a decidedly 80s-90s vibe. I will use bullet connectors for single wire connections and molded flat connectors for multi wire (up to 4). That's what the car had stock and I think it looks right. They aren't as watertight as the newer connectors, but honestly, I coat everything in dielectric grease and the car never sees rain on purpose, so I'm not terribly concerned about corrosion.
