We have gone on a road trip 600 miles. Question is in Portland we have been fighting cooling issues some
289 stock 134K. Champions 2 row 1” tubes full shroud. Ran 210 with AC all the way at 70 and got 15.5 mpg but last 70 miles got into rain and outside temperature dropped to 57. Now car won’t go past 160
Next day I replaced T stat and drilled 1/8” hole. I have Autocoolguy fan controller and have maxed it on the warm side now car just won’t come up to temp like it does in Portland. Any ideas going to be here for a week and I am puzzled

Drilling a hole in the thermostat is unnecessary since Ford put that 5/8” bypass hose in the system to eliminate the issue of air entrapment.
What temperature tstat did you install? With a properly functioning system, the temp usually does not exceed the thermostat rating.

Have you double checked that the fan is not coming on even though you have it turn all the way to warm? BTW I'd watch that, you don't want to forget to put it back and then have it overheat.

Heard a "wise-guy"..........I mean a smart fellow...once say....If over heating at highway speeds= not enough radiator
If over heating in town= not enough fan.
Lets see............your issue is...... your Mustang won't over heat like it did in Portland?? Sooooo you WANT it to over heat because???
Put a piece of cardboard in front of the radiator to stop ANY air flow from going through the rad....bet that will do it!!

Could the rain and moisture have affected the controller?
Do you have a manual over ride switch to turn the fan on anytime you durn-well- 'feel'-like-it?
With my limited experience with the PNW.........it hardly ever gets hot enough for ANY cooling fan to come on!
Highly recommend a manual over ride switch just in case the controller takes-a-dump-in-the-bed..unexpectantly.

First thing's first. Verify that the temperature sender is working. Get a known good sender/gauge on it and verify that there really is a problem.

I think I am a dummy. The mech temp gauge broke off at the block fitting. No leak. Factory gauge working fine checked with temp gun. Maybe car has been fine all a long and gauge was faulty I put controller at factory center and all is working will watch on trip back home on Sunday. Also car did great 15.5 mpg at 71 mph on cruise with AC blasting. Love the Shelby drop car handles like new. We burned out a blinker on ft and the vacuum line cracked at the vacuum module. Oh I installed a 180 stat
