Is there any way to tell without tearing it all down if I have the wider drums and pads on my '69? It has drums on all 4 corners. V8 5-lug hubs. I know they should be 10" but how do I know what width without pulling it all off?
Any way to tell which it should be based on the data plate?

Considering all the things your car has possibly gone through in the last fifty years, I would pull a wheel and simply slide the drum off and measure the width of the shoes.

X2 on what MS said. One rear swap in the past is all it takes to make any information about how the car left the factory useless. Plus, I've seen factory info be wrong about a dozen times. Based on build date my '06 F250 should use 20mm head dowels, so I bought 20mm gaskets before pulling the heads. It has 18mm dowels. I bought the truck new, so it never had an engine swap. That was the last straw, now I verify everything.
